I’m dreaming of cooler weather and spooky times (I’m a big fan of Halloween), so I decided to reach for a fancy farmhouse ale from Almanac Beer Co.: Dream Sequence 01. This special beer is a blend of oak barrel-aged mixed-culture fermented farmhouse ales that have been chosen by Almanac’s brewmaster. This beer features no fruit or other additives, and each ale is picked to harmonize with the next. The resulting ale is designed to showcase complex yet cohesive flavors.
A close cousin of the sour beer is the saison, which can potentially share the same tart flavors that are displayed by many sours. Saisons fall under the category of Farmhouse Ales and sometimes you will see the names interchanged. However, while all saisons are farmhouse ales, not all farmhouse ales are saisons. The “farmhouse” part of the name refers to the method of aging the beer which was originally used by French and Belgian farmers. In the case of saisons, they were prepared in the winter, stored in farmhouses in barrels, and ready to consume by spring or summer. Other beers that fall under the farmhouse family are the grisette and biere de garde.
While Dream Sequence 01 is labelled as simply a “farmhouse ale”, I am going to make the executive decision to call it a saison. The flavors are fresh and tart, with just a hint of that saison “funk” that’s prevalent in any good saison. There is a nice marked tartness that’s met with a bright and effervescent freshness. As the sip dries, you find a whisper of saison funk, which isn’t quite hoppy, but more woody. The wood flavors come from aging this beer in oak barrels, and lend themselves to the other earthy flavors contained in this ale. Overall, I find this beer to be incredibly well balanced and pleasing to the palette. It’s a nice familiar flavor with a boost of luxury.
