With Valentine’s Day coming up, I thought it would only be appropriate to include at least one collaboration beer. This week’s beer is the creation of our dear friends at Omnipollo in collaboration with Crooked Stave Brewing: Bianca Raspberry & Vanilla Sherbert Wild Wild Brett. This is more or less a union of Crooked Stave’s signature Wild Brett and Omnipollo’s Bianca series (inspired by mango lassi). This particular wild ale is fermented in oak foeders with raspberries, vanilla, and lactose.

This delightfully pink beer has a pleasantly tart and wild aroma from the brettanomyces yeast, with a slight acidic earthy smell from the oak foeders. The overarching flavor is fresh and slightly overripe raspberries. It’s tart with just a kiss of sweetness from the vanilla and fluffiness from the lactose. There is enough tartness that you may be inclined to smack your lips occasionally as you drink this beer, however it won’t make you want to pucker your lips. This flavor is very similar to a state fair lemonade, yet still has the complexity and depth of a sophisticated brew. The oak flavors begin to come forth as the sip dries, leaving behind a slightly vegetal but not bitter aftertaste.

At only 4.6% ABV, this is very juicy and crushable beer. Perhaps take inspiration from the brewers of this beer, and let the beer bring you and your honey together to create a memorable Valentine’s Day. I think this would be a great beer to take on a picnic, or to enjoy alone with a hotdog on a stick.
